Not sure if this has been noted, but at the top of the contacts list it shows your phone number, how ever in previous firmwares, if you had unlocked your phone the number would show as the original sim cards number and not the new one. This is now changed and it shows my real number, cool.
 
The phone number is also stored within a backup. I have two iPhones and if I restore one of them using the backup from the other phone which has a different phone number, that other phones number will then show up on my restored iPhone. This can be fixed by restoring the phone and starting it as a new phone.
 
Your phone number is stored on the Sim card in a special location. Most conventional phones cannot write your phone number to this location on the Sim.

Blackberry's can by going into Options/Settings, Advanced, Sim Card, Phone number and then editing.

I also think that Sony Ericsson's can. My Blackberry had my phone number displayed back in June 07 and when I moved to an unlocked iPhone (1.0.2) a couple of months on my number has, and still is, displayed.

Officially, iTunes knows your number and writes it to the iPhone.
