It's a 1.83 Core 2 Duo model, for sale cheap locally. What will my limits be playing back video? It's sole purpose is to sit in a bar and play video's in sequence (VLC) onto a series of TV's using a DVI -> HDMI --> HDMI Splitter. Will it stutter playing back 1080p MKV's?

You might experience an occasional stutter with it. My suggestion, if you don't need wifi, is to install the Broadcam Crystal HD mini pci express card. You can find them on eBay (make sure it's the BCM970012) for around $25. After installing this on my mini 2.0 C2D, 1080p was seamless. Well worth the money.

And definitely max out the RAM, if it hasn't been done.
 
Only for xbmc?

Nice tip. Is it only for xbmc ? What about iTunes/netflix/QuickTime?
 
The new Plex beta can use the card. Other than that, XBMC is the only other software that can make use it.
