OK, a bit late for this information (or not, as people are reporting the "unlimited" option is still available) but I completed my one-day 3G test.
One day of LIGHT browsing and app usage. 94MB. YMMV.
I was actually out of the house most of the day, without the iPad.
Sorry, I didn't record the exact details of my usage. Usage consisted of two (morning/evening) "catch-up" sessions. Scanning real-world and tech news using apps and Safari. NO videos played, save for a single short video from the Apple HTML5 demo page. I followed a few links from news sites. No Wikipedia activity, though that would be normal for my usage.
I have NOT replaced my desktop (Linux) machine with my iPad. I use the desktop for more complex browsing tasks, where I want several tabs/windows open.
Based on my test, I would suggest that if you intend to use your iPad on 3G daily, even for part of the day, get the unlimited! If you have an SUV full of kids to keep entertained, FOR GOODNESS SAKES get the unlimited. (Better yet, get MiFi and multiple iPads...)
In my own case, I work from home right now, so it's a bit of a waste. I rarely take the iPad out of the house, but do intend to start using it occasionally in the car (for navigation). When I am in an office job, though, I prefer to not use my work computer for ANYTHING personal (rules vary, I'm a contractor, I prefer to stay on the safe side of the rules - I'm a stickler on that - everybody else streams audio on their work computer, and I see those Facebook pages when I walk by your cubicle! I'll do the audio streaming on my iPad, thank you, and what's Facebook?) so I would probably take the iPad to work for anything that comes up during the day and for breaks.
2Gig/month would seem to be barely adequate for daily part-time use. You should be able to keep it under 2G, IF YOU ARE CAREFUL. No streaming Ugly Betty for you!
After I get the new iPhone and review my usage for a couple of months, it's likely I will drop my iPhone data plan to 200MB/month, however. I *don't* see using >2Gig/month on iPhone unless something truly "revolutionary" comes out today. I've never used for 240, and most months are 50-100. Don't project iPad usage from iPhone usage!
