When Lion becomes available in the app store, once we download it, will we be able to burn a physical backup to a dvd?

Probably not. There is a work around now, it involves opening the app's package contents and extracting a DMG install file. In the end no one knows what Apple will do until it "ships" in July.
 
Even if not, you could buy a 4GB thumb drive and stick it on there for the next time you need it.
 
I don't see any InstallESD.dmg file anymore. There isn't even a folder called SharedSupport.
To OP; I don't think you can have a physical copy of it anymore (maybe Apple wants to stop people pirating.) However, once you install Lion, you have a small partitioned disk which can be used for emergency purposes, and reinstall Lion if necessary. However, according to 9to5mac, you HAVE to be connected with the internet to do a clean install.
