It comes with 2 x 2GB RAM sticks. Is it possible to add a single 8 GB stick to replace one of the 2 GB modules for a total of 10 GB?

I know some Macs need RAM installed in matching pairs, but I didn't see that anywhere on this particular mini model.
 
Can't see why not

My early 2009 Mini came with 1 GB of RAM. When I asked the shop to up the RAM to 4 GB (to run Mountain Lion) they simply added 4 GB along side the 1 GB. It works fine.

Others have had similar experience, such as a guy I know with 4 GB + 8 GB = 12 GB in his iMac.

The memory will be faster if you remove the 2 gb sticks and add 2s stick that are the same value. Two 4 GB sticks will cost about 45 dollars and 2 8 GB sticks will cost you 80 at Crucial.
