I can vouch personally for 1333 RAM working in an 8-core Mac that likes 1066. Of course, the Mac will only run it at 1066, but it hasn't caused any compatibility issues for me. I'm currently running 2x4GB(1333MHz) and 6x1GB(1066MHz). I think the more pressing issue concerning RAM is buying high quality modules that are fully compliant with Apple specs. In my experience, trying to save a few bucks by taking a chance with low quality or an unknown brand is rarely worth it.
That said, I didn't intentionally buy 1333 RAM for my 8-core Mac. I ordered 1066 from OWC, and they sent 1333 by accident. It went something like this when I phoned them to tell them about their mistake:
me: Hello, I ordered 1066MHz RAM for my Mac Pro, but you guys sent me 1333MHz. I know it will work fine, but I just want to confirm before installing, because I plan on ordering more of the 1066 RAM from you guys in the future, and want to make sure there will be no compatibility issues when I do that.
OWC: Our records clearly show that you ordered 1066, and we sent you 1066.
me: That's fine, but the chips you sent me are labeled 1333MHz.
OWC: Our records show that we sent you 1066MHz chips.
me: Ok. *click*
My time is too valuable to waste arguing about something that doesn't really matter, and that conversation wasn't going anywhere. But, yes, 1333MHz will work fine, even mixed with 1066 chips
