Am I missing something?

I gave 2010 5,1 single socket W chip and dual socket.

I’d like to run 10.14 and boot from m.2 pci.

Should I upgrade the firmware?

My opinion is that you should be running the newest public firmware available on both machines.

Firmware v. 141.0.0.0.0 is recommended regardless of boot drive type.

Stay away from beta firmware v. 142.0.0.0.0

Yes, v140 (and above) brings NVMe m.2 PCIe booting.
 
141 is latest publicly available.

142 is impossible to install unless you’re actively trying as a beta tester.

Don’t install any beta firmware unless you know how to fix a bad problem. It’s beta for a reason.
