I am thinking of temporarily repurposing an Intel MacBook Pro as a file/ Media Server. I understand using an NvME in an enclosure is going to give the best speeds!

Would I get even better speeds if I split my applications between two smaller NvME drives?
In other words I could use 2 1TB drives instead of 1 2TB drive.

Also, is it important to to make sure one drive is plugged into the left USB-C and 1 drive is plugged into the right if I split the drives?
