I own a 16" MBP i9(2.3Ghz), 32gb RAM, 5500M(4GB) and was wondering if I could power it only on ac power while gaming. Back in the days when battery could be detached, there was an option to run on AC mode but ever since it be came a uni-body chassis, is there a way to get around it?

No, if the battery is disconnected the system runs at 1/2 speed

At full load, the computer will use more power than the AC adapter can provide. As mentioned above, Apple throttles their portables to about half speed when run with no battery, or a battery that's failed, to prevent an unexpected shutdown due to insufficient power.
