If I am not mistaken, Youtube is in the process of converting all video to HTML5. I don't believe all video became HTML5 at once.

I uninstalled Adobe Flash for an unrelated reason. Youtube has always worked fine since it's HTML5, but when I tried to play a Youtube video after uninstalling flash, I get a "missing plugin". If I install Adobe Flash, it works again, but plays HTML5 video. It doesn't make sense to me.

Provide us with a youtube link where you get this problem.
 
I'm running Yosemite 10.10.2 on a mid 2010 MBP 13"
I use Safari as a browser.

According to the picture, YouTube should give you HTML 5. But it might not be always possible. That's why it says when possible.
