6 Plus, 16gb. I realize 16gb isn't a lot but my top two culprits are photos (579mb) and text (570mb), so what gives? I have iCloud setup to backup everything. Is there something I'm doing wrong, anything I can look into? Where's my storage going? I remember walking around with around 3gb free easily then poof, gone.

Well, if you store photos then that's where the usage goes to. If you have messages with photos or videos that's where additional usage comes from. You'd need to delete those to free up that apace.

Apps also take up space and the data they store as well.

Also, if you believe that just because your data is backed up to iCloud that somehow it magically does not exist and take up space on your iPhone any more you would be wrong in that belief.

I understand all that. But I remember when I've had photos and messages in the gigs and still had around a gig left over. Now when I open up the manage storage, everything seems pretty minimal in the list. It's just something weird I've noticed over the last few months

Hook up to iTunes to see what the 'other' space is registering as.

This holds the iOS and other data that isn't pigeon holed such as calendar entries, notes, reminders. More info here https://discussions.apple.com/docs/DOC-5142

Some people are finding that  music is using chunks of storage space and have turned that off to find their storage space increased.
