I have a Base 2.3 Mini with 2GB Ram, and this thing Encodes 8 movies in the time my 2009 C2D 2.0 GH with 4GB ram encodes 4, I did not realize how fast the new i5 CPU's work. I just wish there was a way to remove Lion and put SL on there with no issues and no hacking, if Apple allowed this it would be cool, not really liking Lion much.
 
I did the exact same upgrade. I use reasonably high Handbrake settings and my 2010 base Mini would encode at around 6-7fps. My new 2.3i5 8GB Mini does around 16-18fps. Wonderful upgrade. Sold my 2010 for 500, and I actually made a $20 profit on upgrading due to selling my BTS card and selling the rebate printer :D
 
Paid $299 for my 2011 i5 2.3 Base Mini since they could not repair my old one, they gave me money off on the new one, I sold my first base mini, but then I decided to replace my broken one with a new one so it was a good deal using my 4GB 1066 memory until my 8 GB 1333 arrives but way cool as far as the i5 over the C2D.

lion is not good for my needs. it also cost me a large sale to a dj as all his programs serato sl2 etc don't work with lion.

It does not only depend on the CPU. The developers of x264 improve their code daily. And regarding Lion vs SL: I do not see how one of the systems improves video encoding tasks, because the missing QuickSync support is a hardware problem, AFAIK.
