I initially reserved a 16GB iPad at the apple store, then I changed my mind, so I _thought_ I cancelled the 16GB and reserved a 32GB. However, today I got an email from apple about my upcoming reservation and the 16GB & 32GB were listed. I assume there shouldn't be a problem when I go in if I tell them I just want one of the iPads right? Worst case scenario, I pay for both, then return one (without opening it), a day or two later.

Pick up both, sell one for a profit to the people waiting in the line behind you. Simple and effective solution. :D
 
The reservation is nothing more than just a reservation; you have no financial obligation to pick up one or both. I've reserved a few computers at the Apple Store in the past and changed my mind about things I've reserved.

And yes I've confirmed it with the Apple Store.

No way they would make you buy the second one just because you have the reservation. Just tell them you only want one, and the other one will be quickly sold to someone else no problem.
