In Mac Pro 3,1 8 core.

Will the Radeon 5770HD 1GB accommodate two 27" dell monitors, 2560x1440p?

Only for working, not for gaming.

Yeah should be fine. You will need to get a mini display to dvi converter for at least one display. Like this Has to be powered for anything higher than 24".

The dell monitors have DisplayPort conection, why i need a active cable?

Two cables miniDP - Dp, don´t work fine?

I say this because sometimes I connect another monitor 40" (1920x1080), and the two work perfectly together.

MiniDP->DisplayPort cables as you describe should work fine; you only need the active DVI adapter for DVI connections.
