Can one connect 2 monitors to an M1 Pro 14" MBP or M2 Pro 14" MBP? And at the same time also use the built-in screen?

In the past I used my 2019 Dell 15.6" laptop like that with 2 monitors connected and also using the built-in screen.

For about a year I have had the 2 monitors connected to my M1 Mac Mini 16gb, but I am getting interested in the 14" MBP.

Yes you can. See the specifications.
I did not see in the specifications that at the same time 2 monitors are connected that the built-in screen may also be used. Can you provide the link where you saw that? Thank you.

M2 Pro

Simultaneously supports full native resolution on the built-in display at 1 billion colors and:

Up to two external displays with up to 6K resolution at 60Hz over Thunderbolt, or one external display with up to 6K resolution at 60Hz over Thunderbolt and one external display with up to 4K resolution at 144Hz over HDMI

One external display supported at 8K resolution at 60Hz or one external display at 4K resolution at 240Hz over HDMI

Thank you! I do not know how, but somehow I missed this part when I looked earlier today:
