If i install a gtx 970 (non mac) i loose the boot efi screen.

is it possible to install an older gpu just for the boot efi?

gt 120
gt 8800
gtx 285

those are popssible gpus that come to mind but im guessing not compatible with yosemite?

Yes

But if you don't have a Mac you don't need an EFI boot screen. If you need a boot loader for Hackintosh that's another story.

which combo works best on a 5,1 mac --- wont the nvidia gt 970 web drivers be too new for the gt 120?

the gtx is non mac the gt 120 is mac

GT120 is the best option. You'll see the boot screen only on that card, not on the GTX 970.

So if I can't connect both boys I would have a boot screen? What about with a ati 5750?

You'll always see the bootscreen only on the EFI card, the PC card won't be affected.
