My Mac mini server will default back to 1080i every time I restart and I have to manually switch it back to 1080p. Is it a bug with Lion or am I missing something?

What type of monitor are you running? Just wondering if you may need to do a factory reset on it. I had something similar happen where every time I rebooted my screen went into overscan mode. Come to find out it was the monitor. Once I did a factory reset on it this issue totally went away. I think the monitor may have had overscan enabled and this was causing the issue.

I don't know if this will solve it, but just a suggestion!

It is a 1080p Samsung plasma. The problem went away after I switched the refresh rate between 24hz and 60hz. Should I leave it at 60hz or 24hz by the way?
 
24 hz is a film mode, so you'll want to run 60hz all the time. There shouldn't be any difference in the visual quality between 1080i and 1080p. Your screen should automatically adjust to compensate. Can you see any difference between the two modes?
