OWC 4M2 is not a good performer when installed in a MP5,1. MP5,1 PCIe slots are PCIe v2.0 and the 4M2 is just a x8 card, throughput will be limited to ~2900MB/s even with RAID0. Forget it.

Wow thanks for that. What would you recommend I get then as I would rather update what I have rather than buying new.

HighPoint SSD7101A-1, it's a x16 card and works at around 5900MB/s with a MP5,1. See the PCIe SSDs thread.

So if I go for that, then I guess I will need a couple of Samsung 970 Pro drives.
Would I be able to boot from my current SSD and use the NVmes for processing my pictures in Photoshop?

Read the posts that I linked, you will find all relevant info there, like the needed Mac Pro firmware upgrade.

Radeon VII needs Pixla's mod.

Radeon VII is probably overkill if you just want it for PS/Lightroom. Even something like an RX570 should be plenty for that - put the extra money into the future upgrade fund.
