Would there be a noticeable difference?

To be honest, I'd avoid either one those configurations without some kind of SSD or Fusion drive as otherwise performance and boot time will suffer. A Thunderbolt or USB SSD can be added externally after purchase. (Really can't believe Apple has chosen to continue selling new Macs without one...)

As for the other specs, you're looking at a faster GPU + RAM on the 2017 and faster CPU on the 2015. For everyday use, I honestly think they will be about the same with maybe a slight edge-out by the 2017.

I should say that I'm using it for a dedicated iTunes machine for my whole-house audio. My iTunes library is located on a Synology NAS. I just bought the 2015 iMac (on sale), but if there isn't a noticeable difference given my application I'll probably stick with the 2015... I run USB out to a Focusrite Scarlett Solo, then over to a stereo for the whole house audio.

BTW, I also have 2016 15" rMBP TB maxed out and a 12" MacBook...
