Hello.

I want to upgrade the RAM of my 2017 5K iMac with 2x8GB sticks.

It currently has the 2x4GB stock RAM installed.

What brands do you recommend ? Kingston, Crucial etc.?

Can I mix the the RAM sticks ? Meaning I keep the 2x4GB stock sticks and add the new ones in the empty slots?

I've read different opinions on mixing RAM sizes and am not sure what to make of it.

I have Corsair Vengeance 2x8 GB DDR4 CL16 2400 MHz and use it with stock 2x4 GB RAM and it works without problems.

I use OWC DDR4 PC19200 2400MHz SODIMM - 16GB Kit (2 x 8GB). Works fine. Yes you can mix sticks just better to keep it in Matched pairs. Just buy a new pair of two identical ones and put them in the spare slots.
