I'm running a 2017 iMac with two LG Ultrafine 4K external displays connected via USB C (3.1 Gen 1). These displays are connected to the two Thunderbolt ports.

Since the displays are occupying both Thunderbolt ports, am I completely out of luck if I want to connect any more Thunderbolt or USB-C devices?
 
I'm not 100% sure about this, but couldn't you daisy chain the monitors? Or maybe use the Ultrafines as a USB hub?
 
Good idea, but no. The Ultrafines can't be daisy-chained or act as a USB hub. They connect to the Mac via USB 3.1 Gen 1, but the hubs on the displays themselves only run USB 2.0.
