I am hoping to be more mobile this year and looking to switch from the 2017 imac (1 TB) to the 16" macbook pro and adding a docking station when a larger screen is needed. This would be mostly for photo editing in light room and Photoshop utilizing external drives for all storage needs. What would be the drawback of the macbook vs my current desktop?

The current iMac costs you nothing, the MacBook Pro will most decidedly cost you money. That is the only drawback I can think of. For what it's worth, I sold a 2017 iMac to get the 16" MBPro and have absolutely no regrets at all.
 
I have both. Am considering getting rid of the 2017 iMac and just docking the MBP with my LG 5K.

I would NOT do this if I didn’t have an LG 5K. The iMac screen is just too pretty.

That's exactly what I do... MBPro 16" docks to LG5K (which already has a backup drive and other peripherals plugged into the LG so they're ready to go as soon as I dock the MBP. Best of both worlds, IMO.

Yeah, there’s that USB C hub on the 5K plus the other three USB C/ TB 3 ports on the Mac. I have no need for Ethernet, USB A or an SD card slot.
