I had purchased the SSD and adapter to upgrade my 128gb 2017 MacBook Pro. Last week I updated my system without even thinking it might affect my upgrade.

My system HD is APFS encrypted,
And I want to know how I can restore that to my new sabrent 1TB m.2 SSD I’ve seen at least a dozen videos and none of them are representative of my situation.

I have formatted it to APFS with GUID scheme, and it says there is a notification of device not configured properly. It is not APPLE_HFS or APPLE_UFS. What does that mean? When I have the new SSD formatted to Max OS extended Journaled it gives me a not formatted with GUID partition error. How can I fix this, and does Monterey update have any affect on my upgrade of SSD? Any help would be greatly appreciated.

If it's Monterey the drive needs to be APFS with GUID partition format.

I suggest you:
a. use that format
b. if things STILL don't work, TURN OFF all encryption and start from scratch...
