Does anyone know why the 2018 IPP cannot disconnect the microphone “When an MFI compliant case is attached to the iPad and closed”? The hardware should be able to do this, right?

No. It's specific to the 2020 iPads right now, because they are the only iPads with Apple's T2 chip.

iPads don’t have a T2 chip. I’ve heard that it’s possibly a new magnetic switch in the 2020 case that switches off the microphone (this isn’t done via software)

You're right. I made a mistake. The 2020 iPad Pros don't have a T2 chip, but they do have a hardware microphone disconnect. Since it's hardware, you can't get that on your 2018 iPad Pro.

You know it probably has to be done magnetically. But the 2018 IPPs don't have the appropriate hardware to respond to the magnet in the case.

I have the 2020. I was just curious why the 2018 can’t do it if the hardware is all the same. Just thoughts that come to my head during the commercials while watching TV.... lol
