I'm finally looking to trade-in my 2015 iMac Retina 5K for 2018 Mac Mini, trying to decide between i5 vs i7 for my needs.

My current iMac configuration is
4.0GHz quad-core Intel Core i7, Turbo Boost up to 4.2GHz
32GB 1867MHz DDR3 SDRAM,
1TB Flash Storage
AMD Radeon R9 M395X with 4GB video memory

My primary use is going to be for Adobe Lightroom CC and Adobe Photoshop CC for image editing.
I also have 2012 Mac Mini that I've upgraded to 16GB RAM + 1TB SSD on my own.

The Mac Mini used 8th gen desktop class CPUs, most people wont even need the i7. For example, Mac Mini i5 will outperform the MBP i7 in almost every way. Hyperthreading is were it’s lacking. However, 6 cores should be enouth for your needs.

Thanks for posting this. I was wondering if my wife needed the i7. She’s a photographer that mainly uses Lightroom and a little photoshop. I’ll be getting her the i5, base Ram (I’ll upgrade myself), and 512 SSD. What monitors are good for photo editing that won’t break the bank. It’s gonna be a pricey holiday season :) She doesn’t need a huge screen but at least 24”.

Well Dell U series IPs or BenQ are good choice for digital image editing.

Thank you all for taking time to clarify, maybe I will pre-order mine from BestBuy with i5 version.
