I'm trying to start up from the recovery volume on my 2020 iMac (has a 1TB SSD) and it tells me a software update is required. When I click update it then says the volume is not a valid startup disk and forces me back into starting up from the default disk. Anyone else had this problem and know a fix?
 
Try booting into INTERNET recovery instead.
This is NOT THE SAME AS "the recovery partition".

Command-OPTION-R at boot.
If you connect via wifi, you'll need your wifi password.

The internet utilities take a while to load, be patient.

Does this work?

Why did you feel the need to boot to the recovery partition in the first place?
