This one is really chewing at me. I just bought a lovely 2023 MacBook Pro with the M3 Pro (the base of that tier, 18 GB RAM and 512 GB SSD) but have been eyeing an older (but sold new) 2021 MacBook Pro with the M1 Pro and 32 GB RAM and 512 SSD. The price difference is minor; I’d get about $200 back (which I consider a wash since I’m sure if I sell or trade in in 5 years or whatever, the ’23 model year will be worth $200 over the ‘21).

Unlike seemingly many of you, I’m not really a power user - I’m a step beyond only needing an iPad (though I did make that work for a while!) but my workflow is primarily document editing (Office suite), and some photo and light video editing. Very occasional 3D rendering (CAD). The aspect that might require more power is that I do sometimes run Windows in a VM.

I appreciate that both machines are overkill, but I love the form fact and screens on the Pro models. Wondering - for my use case - if there’s a clear contender between the two. Is it silly to buy an aging processor now?

Keep the M3 Pro. I have the M1 Pro 16 inch and the M3 Pro 14 inch. If you are sold on the form factor, I would make battery life the deicder. The M3 Pro is just more efficient and you'll be glad to plug in less. Not that the M1 Pro is bad at all, but I can definitely see the difference between the two. Also, the M3 Pro is a bit snappier with loading apps and webpages thanks to its higher single core performance.

FWIW, I wouldn't pay just about the same money now for a two-gen old processor even with the bump in ram (which you don't seem to need). Just my $0.02 (or $0.01).
