Because it hasn’t been ratified yet. Companies always produce “certified” products for new standards but until everything is complete later this year, you’re not likely to see Apple claim it. Besides, Apple is always late to market.
I would even argue that until Apple increases their 80MHz channel bandwidth to 160MHz you’re still missing out on a ton of throughput.
