I have a 24" iMac (white) with the following specs:
2.13Ghz
3gb Ram
25gb Hard Drive
7600GT

if i wanted to replace the CPU what's the best i could do or which intel chip can i buy from newegg that would work?

Of course, you longer you wait, the cheaper you can get the 2.33 for.

But heck, that's almost like a power pc mac update: power books now upgraded from 1.33 to 1.5 ghz!

i've got the 20" little sister of the same machine. its maxed out to 3 gig, it has applecare until october 2010. I'm happy with how it runs and performs. even parallels 3.0 is snappy on it. Compared to my powermac, it's quiet as a whisper.

If you always have to have the newest, latest, fastest, etc., let's face it, you're always going to get punked by apple. Especially with the switch to intel and they're revolutionary new chip every six months roadmap.

Not necessarily so. Since these are mobile CPUs and laptops usually solder their CPUs onto the mobo, there isn't a huge aftermarket for upgrades. Therefore, I suspect supplies of these CPUs to be fairly tight and since Intel has already stopped production of them, the price may not necessarily drop in the future.
