I'm using my girlfriends old 2G as an iPod touch, the phone function has been turned off, although a ATT sim card is still in the slot. Is there anyway I can change the carrier name from "no service" to something custom? I've tried make it mine, fake carrier, and a few other apps but nothing as worked so far?

The way to do it would be to find the "No Service" png file on the phone and replace it with a custom file with the same name. Check the pixel dimensions before you make the replacement. You can then make a tiny graphics file showing/saying whatever you want with Photoshop or something.
