With regard to the Macbook: How significant is the performance gain from using a pair of 1GB sticks rather than a single 2GB stick?

If the performance difference is not significant for mainstream apps (browsing, iTunes, email, word processing, video viewing, the occasional DVD ripping) then I would rather opt for the single stick and leave the second slot open for future use.

this is one of the only times there will be a performance gain (the other is 2x512MB vs 1GB).

Two sticks will work a little better than one, but if I were in your position, I would get the single stick and get something else further down the track.
 
Go for the single stick, the performance gain in using matched pairs is not significant.
