3.1 and Voice Dial w/ Apple Bluetooth Headset

Ive been hearing all this news about how you can invoke Voice Dial from the Bluetooth Headset with 3.1. Does anyone know HOW this works? Specifically, how it works with Apple's Bluetooth Headset? Im wondering because a press and hold on the only button the Apple Bluetooth has will turn it off.

that headset was discontinued awhile back. I know nothing about it, but wouldn't be surprised if it didn't have simple functionality like this.
