At the top end of the 27-inch iMac you can add another $200 to make the 3.1GHz Core i5-2400 into the 3.4GHz Core i7-2600.

So is it worth the upgrade?
 
Worth it.

The i7 has hyper threading support, meaning that it can run 8 threads simultaneously rather than 4.

Also faster clock speed!
 
google is your friend. There are sandy bridge benchmarks plastered all over the web.

Googled but no data relevant to Mac users like myself.

I do Aperture 3 & Final Cut Pro so would the i5 be at par with i7 for these applications?

I deal with files from EOS 1D Mark IV, EOS 7D & EOS 5D Mark II.
 
Hard to say about the new Final Cut since it is not out yet. However, if the multithreading support is as good as it sounds like, then the i7 should be worth it.

Nobody has benchmarked the new imac with specific apps so you're not going to get those specific answers yet.

But there are tons of sandy bridge benchmarks out there going over various video and photo tasks and those will give you an idea of where these imacs are at for those types of tasks. Anandtech.com is my favorite review site.

Yeah editing those 18+ MP photos and 1080p files will be a bit speedier on the i7. Not night and day faster, but every second you save over its life can be beneficial.
