So I’m using Apple’s 3.5mm cable (with a dongle) with my Airpods Max connected to an iPhone. Transparency button still works. However I’ve lost full functionality of the digital crown. Can still adjust the volume but pause / skip etc doesn’t work. Is this right or am I doing something wrong ?

That is normal. The 3.5mm cable has a regular TRS plug and for that functionality you need a TRRS plug.

The cable is really only meant for situations where you cannot use the headphones wirelessly -- like to listen to audio from a plane's entertainment system. Any other situations it's meant to be used with bluetooth.

...or in music production. The amount of delay with Bluetooth when recording is horrible. With the Lightning to 3.5 mm cable from Apple the response time is "instant"

Don't know about the dongle thou. I bought the Apple 1.2 m cable. Lightning -> 3.5 mm
