The max for my Rec. C laptop is 3 Gb of ram right?
Also, is it better to max out the laptop at 3 GB (Which will have no Dual Channel capability because of 2gb x1 and 1gb x 1) or 2 GB ( 1gb x 1 - 1gb x 1) (which will have Dual Channel capability)? Which one would be better?

THe MacBook Pro C2D will take 3 Gb RAM, yes. It will probably not do dual channel (Apple is vague on this). The impact of not doing Dual Channel is minimal (6% - 8% estimated). IF you are using large apps (Photoshop, digital audio, digital video, modelling, etc) then almost certainly the speed gain of the extra 1 Gb will outweigh the penalty of no DUal channel.
