On the Apple site from where I purchased my iMac 27", I chose the one on the left, $1799 base price. After ordering, I realized it said it could only be upgraded to 32 GB ram. It is being delivered today. I decided to run Parallels on it for my Windows apps, and was planning to buy 32 Gb (2 16's) to upgrade the 8 GB to 40. I chatted online with "specialist" who said that all 2019 iMacs could go up to 64. And that one is supposed to be a 2019. So I am not sure which to believe yet.
Can anyone clarify this for me? Here is the page that I ordered from:

According to MacTracker, Apple will only commit to saying that all of the 2019 iMacs can go to 64GB (which is exactly what your specialist told you). However, MacTracker says that they take up to 128GB.

 
But with the web site selling the iMacs, it claims only up to 32? If that is true, I could not add the 2 16's ? That new 32 gb plus the 8gb installed would be more than 32gb, if that is true.
 
I just called Apple. Apparently the way it is written on the web site, they only mean that the new purchase as listed can only be adjusted to add to 32 gb ram. Not that the system cannot have more added later.
So I guess this answers my question.

Yes. Apple’s published tech specs don’t specifically list the maximum RAM. They only tell you what it can be configured to for purchase.

Yup...

Apple used to list how much RAM was supported on their Mac tech specs, but stop a few years back and changed it to "configurable". Usually it was wrong anyways, as most times, the Mac were able to support double what Apple officially stated in their tech specs.

I suspect that this was what RAM was available at the time of release.
