The 4 core mac is about $500 less than the 8 core mac pro.

I will be using it for editing in Final Cut Pro, After Effects, etc.

Im not a professional just an amateur. But is it work the extra $500 for the 8 core?
 
Yes. It will be twice as powerful in After Effects. Slightly more powerful in Final Cut because you'll have a bit more headroom.
And were talking 2008 right? 2010 is a bit different.
 
I would. You want twice the Memory slots (8 slots) and more than 4 cores for After Effects. It's the beast. Final Cut is all single threaded for the most part.
