How much less spinny disk could I realistically expect going from 640MB to 1GB on a 1Ghz eMac? Is it likely to be noticable? I tend to leave Safari and Firefox open (for me and my wife respectively) along with iCal and often iPhoto while watching videos or listening to iTunes and so on.
 
I don't think it would make much difference. I have 640mb in my PBook and considered upgrading to 1gb. But I decided against it.
 
I would imagine there would be a noticeable difference. 1GB is a nice amount of RAM and two 512 sticks are quite affordable these days.

If it was 768 MB to 1 GB, I'd say no. You don't need to add more RAM. Otherwise there is going to be a little less beachballing and slowdown.
 
Take a look in Activity Monitor, and click on "system memory." You'll notice an entry for Page Ins/Outs. If you have Page Outs numbering in the thousands after an hour or so of use, you will probably notice a difference by upgrading to 1gb. I've got 384mb in my iMac, and as long as I keep open apps to a minimum (usually safari, itunes and occasionally mail), my Page Outs stay at zero.
