Going to be streaming everything so just like 6 apps for media. Want something to use while chilling before bed and don't want to kill my phone battery

If you're planning to keep this for ~5 years having an extensive storage capacity is well worth the price, even if it's only knowing you've got more than you'll ever need. $150+ upfront sounds a lot but think of how much better you'd feel seeing 200GB available at any time than only 20.

I'm planning to get an air and don't see reason to get 250GB, but Apple doesn't offer 128 anymore! I'm buying the extra to ensure I've it covered for 5 years.

That sounds fine.

Keep in mind that the OS does get more bloated after a few years. With 32GB (base until 2020 iPad 8th gen), I’ve sometimes had to delete apps in order to install OTA updates.

However, as long as your usage doesn’t change (stick to pure streaming and don’t install a lot of apps), 64GB should suffice.

Always better more space. I picked up 64 gb with my 2018 12.9 pro and I regret it. Didn’t make the same mistake with iphone: 256 gb for 12 mini and now 512 gb for 14 pro max.

For me, it comes down to how heavily you rely on your cloud and streaming services. 64-128GB works plenty good for me.

To be honest I have a 64GB iPad mini and it’s fine for me. I steam most of the time. I have a 256GB iPad Pro but I’m not even using up to 64GB on there. It depends on how you use it I guess.

Yeah, it’s entirely dependent on the user.

Even on spare iPads, I prefer 128GB minimum unless it’s for a specialized limited use case. There’s just no breathing room on 64GB for me.

I remember one time, I wanted to install Genshin Impact on a 64GB iPad. Even after deleting a bunch of apps and data, there still wasn’t enough space (Other was too big and there’s no way to manually offload iCloud Drive files short of deleting them). I ended up having to reset the iPad and setup as new just so I could install the game.

I got the 64GB Air 5. I logged into it with my iCloud account and once it started syncing Photos and Messages it was half full. I ended up returning it for the 256GB model. Right now, I only have about 12GB of photos and 3GB of messages and only do streaming. For some reason, System Data is taking up 103GB of storage and I have no idea why. Always get more storage than you think you'll need.

That 103GB is likely iCloud stuff that hasn’t been categorized yet. Probably photos.

Put some consideration into space taken by the OS, streaming apps themselves with their large libraries and saved prefs. You may also want the freedom to watch shows offline at some point or location outside the home. So my vote is for anything larger than 64GB.

We have 2018 pro with 64 Gb. Nonissue for streaming and more writing. I bought the new mini iPad with 256gb and it’s barely using any space

Given your uses, 64GB will be fine. I heavily use my 64GB 9th gen for far more than that and storage isn't an issue. The advancements in iPad OS with regard to support for external storage make utilizing that for local media a surprisingly good experience.

I picked up a lightning to microsd card dongle from Temu and use it with a 256 GB card.

You should be fine, as long as you do not keep too much stuff on it. I use my iPad for almost everything without any limitations and here is how its storage looks:
