Why not just leave them be? They take up very little space and do no harm unopened; you can, however, cause significant problems if you start deleting the wrong app.

Any OS X application (so any of the ones that were on the Mac when you bought it) can be installed from the OS X discs. Some can’t be installed straight from the discs, so download and install a program called Pacifist. After it’s installed, insert your OS X install disc, and get it to scan it. It then gives you a list of every program on the disc. You can select whatever ones you want, and it will extract and install them back to the computer.
