I understand the initial hoops that need to be jumped through to get thunderbolt 3 working on the 6,1 using kryptonite, tried to search online for this question to no conclusive answer.
If i buy one of the supported enclosures, will the 6900xt work on the 6,1? I don't really see the issue as it says it is supported but looking for a concrete answer.

also looking at the blackmagic vega56 egpu would that be a better option?
 
Sure, i do so since almost a year now whenever i need to.
I documentated all here, just read the whole thread to understand, and take care to use 0x73BF (XTX NOT XTXH Die) cards, or your 6900XT won't work. And make sure to freeze your system to latest Monterey overlay stepping cause it is the last supported and native major release and supported eGPU functionality for your 6,1: https://egpu.io/forums/wip-builds/egpu-purchase-decision-guide-for-a-mac-pro-2013-trashcan/

At the very end before choosing the enclosure and the GPU you have to figure out which card in terms of length fits into the enclosure. Aslo you have to choose wisely the MOSFET design of the 6900XT to avoid non stop chirping sounds when operating under load. And then an effective cooling concept. I spent a lot of time deep diving into different PCB designs of this GPU generation and come to the conclusion that the MSI RX 6900 XT Gaming X Trio is the best NAVI 2 design. But it was hard to find in very good condition for a decend pricing.

I'd avoid a Vega56 or for example Blackmagic eGPUs which are sold as they are. Get your hands on a Razer Core X and choose an XTX Die RX 6900 XT and you're set.
