So maybe I can get the 2011 iMac by the end of this year.

How good is the 6970M for gaming? If I have Windows installed, should I download mobile or desktop drivers?

I'm planning ahead. :D

It's quite good , other than the low amount of ram, if you want to game avoid the 27" 512mb and 1GB models if you want to play at native resolution

I wish the 21" had a 1GB 6970m option . or at least a 1Gb 6770 .

As for drivers , not sure yet if anything other than the stock bootcamp drivers work
 
It's a very high quality graphics card.

I'm running Source games at their highest quality and native resolution and it rarely ever dips below 60fps, if at all.

< some of my screenshots taken with this card. I'm still just using the bundled Apple drivers for now. I figured I'll get the better ones when I start to notice modern games running bad. But for now the stock ones will do!
 
You'll want to download the mobility drivers.

I haven't had a AMD/Ati laptop for awhile, but for Nvidia I have always used modded desktop drivers for my laptop.

Nvidia had a policy where the manufacturer had the responsibility in updating their drivers and bootcamp drivers have always been a few generations behind
