I'd like to repair it, but how do I know which parts I would need? I've seen just the glass, and then the entire screen. The touch screen still works. I can see everything fine through the shattered glass.

Which part you need depends on your skills. According to your situation, replacing just the glass lens will bring your 6+ a new life and it's cheap. However, this requires professional skills and even you've successfully done that many times, it's still very risky. You'll need the new replacement glass, heat gun/hair dryer, LOCA(glue to bond the glass and the display) and UV light(to dry the LOCA glue), which all can be found on ebay/amazon.
Replacing the whole screen is much easier compared with the glass only replacement, you just need to transfer all the small parts(homebutton, brackets, front facing camera, etc) to the new screen then install it.
However, if you have the warranty, do make it too complicated, just let Apple replace it for you. The OEM screen of iPhone 6+ is expensive than the Apple replacement price.
Here is a reliable source for the 6+ replacement screen: http://www.etradesupply.com/apple-iphone-6-plus-lcd-assembly-with-frame-black.html
