I was on my 4S, jailbroken running 7.0.1 or whatever it was but suddenly had to get rid of my Jailbreak and restore (and went to 7.1.1) so as to have an overall working phone while I traveled abroad.

I'd love to downgrade back to a jailbroken device, but hear it would be impossible to go from 7.1.1 to anything lower in iOS 7.

I was jailbroken before on iOS 6 and iOS 5 and would be willing to go back to either if it meant having a jailbroken device. (OH, the same goes for my iPad 3rd gen, currently on 7.1.1 as well)

Any words of wisdom is appreciated in pointing me towards the right direction.

Sorry to break it to you, but you're stuck. There is no way to go back, especially on a 4S. You'll have to wait until a jailbreak comes out for 7.1.1 or iOS 8.
