Hello Folks.....I decided to do a clean install of Big Sur from Catalina. I used this article to do it https://support.apple.com/en-us/HT201372 After the installation was complete, there were the pictured 8 new folders appearing in Documents. The size of each folder is either 0 bytes or 31 bytes. They appear to be related to iCloud, but I have no other Apple devices. Does anyone know why they are there and what I should do with them? I haven't tried to do anything with them as of yet. Thanks.

Thanks. I couldn't figure out why it happened or what to do with them. I decided to do a total clean install today. Everything is looking fine now. I read your thread. It looks like a similar issue, but not the same. Maybe do a total clean install like I did. When I say total I mean erasing both volumes using Internet Recovery (CMD + R). The first time I did it (via bootable media) I only erased the system volume. That left me with the strange folders. Good luck.
