Hi, I was wondering if Monterey is "stable enough" already and it's worth updating, or if I should wait for the public release. Second question is, if I upgrade now to a beta, can I then upgrade to the public final/GA release when it's out? Thanks!

Most find Monterey beta 6 very stable, but it’s been almost 3 weeks without a new update so look for comments about a beta 7 early next week. Yes the beta cycle will end with a RC that goes public.
Always keep a recent backup in case something unusual happens, so you in the very least can use migration assistant to restore all you system settings and user data after reinstalling the OS if that should ever be necessary.

If you enjoy seeing the latest features, it’s a fun way to learn how Apple evolves the OS on Mac’s, and you can provide feedback on anything that isn’t working as it should.
The revised Safari 15.0 when tested with https://browserbench.org/Speedometer2.0/
is very fast comparable, still it has a few URL's it has problems rendering correctly. Most render fine, so not a concern. As previously pointed out we are not even half way though this beta cycle as you can see with this post.
