A silly question, but I am kind of confused.
So I got myself a 27 inch 4K monitor, amazing stuff after a 1080p external monitor.
Went to Display settings, and if I remember correctly, some time ago, there used to be a menu of some sort where you could actually go through bunch of resolutions as in displayed in numerical values, like 1080 - 1920, etc etc, but now, I only see this?

Am I missing someting here, i am running a 2020 M1 Macbook pro, same issue whether display is connected via USB C or HDMI.

If you hover over the 'scaled' icons they will show the simulated resolution. My understanding is that the OS does the scaling instead of the monitor, which is probably why they don't show them as the key value of the selection.
