I'm contemplating grabbing either a XR or a 11 within the next week. I've never used Night Mode, but noticed something while doing research. It seems like every time the camera app is opened, Night Mode will be automatically engaged if the lighting in the room isn't ideal. Is this true? But sometimes I would just want to take really quick photos in poor lighting, without worrying about using Night Mode, or it's shutter to get better light. I know the user can tap to turn it off, but it seems like it would be nuisance to constantly have to turn it off each time. Am I understanding this properly? Is there a way to have the default setting have Night Mode be off?

Sadly I can't go to an Apple store to try one out, since they're closed.
 
There’s no “default” or settings for night mode. It’s either automatically turned on or off. All you need to do is just tap the capture button. Don’t worry too much. If you don’t keep your hands stable enough then the pictures will just not be as nice if you’d have kept them stable otherwise.

If you set 0 seconds - there is still night mode ? or it is turn off ?

It’s still night mode but the aperture is not open for long enough to let the light in to make it into a really good shot. That’s why when your hands are stable by default the number of seconds increase. If you use a tripod it shows 5 secs by default but you can get up to 20 secs for a much better shot.

The whole point of night mode is to help the user to guide through the process to capture a better shot along with the help of computational photography.
 
This photo was taken at 9:59 PM on Feb 1, 2020, making use of Night Mode. My iPhone was hand held (no tripod), and I believe it has acceptable sharpness. The shutter speed was, I believe,
