About backups and restore

As far as I know, yes. I did that with my iPhone from an unlocked 2G to locked 3G, and everything is working fine. The JB apps won't get backed up.

You can't that is fine. Just make sure to not be using categories when you do the restore/backup. Because that messes things up. If you want to backup the jailbroken stuff you can use AptBackup from cydia.
