If I install a few games that would make better use of the Nvidia drivers expected to ship with Mavericks 10.1, would those games have to be reinstalled to use the new drivers? Or all I have to do is get the new drivers and Mavericks does the rest?
 
The drivers are part of the OS update. There is nothing you need to do beyond letting it install.
 
You can Get drivers directly from NVIDIA, and sometimes they do offer a slight performance increase in games.

However they're horrible for everything else. I've had constant Graphics Kernel crashes in Screenflow, iMovie, FCPX, VLC, and other programs with it.

In games they're fine, but you need to reboot to swap between them. Personally I just use OS X drivers.

Personally I would just stick with OS X's drivers, and their updates, there seems to be a big one coming with 10.9.1 as the Seed has asked people to look at the Graphics, and Drivers specifically. Most likely gearing up for the new Mac Pro launch as well.

Nvidia doesn't have updated drivers (at least as of two days ago) for Mavericks (at least for the Quadro k5000 :/). Thankfully the stock Apple drivers are pretty good and honestly I think they are better than nVidias. Mari runs beautifully.

There are almost always updated graphics drivers in every .x OS X release. It would be surprising if they were unchanged.
